Paula’s Basil Pesto

2 cups tightly packed fresh basil
2 tablespoons nuts (pine, almonds, walnuts, your choice), lightly chopped
2 large cloves garlic, lightly chopped
¼ to ½ teaspoon salt
1/3 cup Extra Virgin Olive Oil
½ cup Parmesan cheese
2 tablespoons Romano cheese (optional)

Pulse basil, nuts, garlic and salt in a blender or food processor to begin chopping.
At a high speed, pour in olive oil in a steady stream until blended together.
Put in bowl and add cheeses. Mix together. Enjoy!

Makes enough for 1 pound of pasta.
